Beetroot salad

Ingredients:

  • Beet root: one tin (sliced / diced & grilled) OR fresh ~3 (diced & grilled)…grill @ medium x ~3-5 minutes (longer time for fresh beetroot)
  • Nectarines: 5-6, diced
  • Halloumi (~250g): grilled x ~ 3-4 minutes until slightly brown
  • Silvered almonds: ~40-50g
  • Parsley: 3-4 shoots – washed & cut

Method:

Mix the aforesaid ingredients, followed by

Dressing:
* Sprinkle a bit of extra virgin olive oil

* lemon-squeeze generously

OR
you can use any other dressing of your liking e.g.
Balsamic vinegar OR  French onion etc etc

Cooking Time (Minutes): 5

Our mum loved to cook. We, as a family, relied heavily on her cooking. To our luck, she wrote written records of her recipes. Since she passed away, we have been able to follow her recipes very easily. We have realised how the tasty food that we loved is made with such simple recipes.
