Eggplant with Colocasia


  • 4 long egg plant
  • 250g colocasia
  • 1 onion
  • 1 tomato
  • 1 tsp turmeric powder
  • Salt, red and black pepper as per taste
  • 3 tsp oil


  1. Peel colocasia and wash it.
  2. Dry with paper towel and dice into long thin slices.
  3. Fry colocasia in oil to light brown colour.
  4. Peel onion and dice in thinly.
  5. Cut egg plant in long thin stripes.
  6. Sauté onion till golden brown.
  7. Add diced tomato and the spices.
  8. Mix in eggplant and fried colocasia.
  9. Cover the vegetable and stir it occasionally.
  10. The eggplant and colocasia will be ready in 5-7 minutes until tender.Enjoy with Tandoori Chapati
