Eggplant Delight


  • 2 brinjals
  • 2 onions
  • 1 tsp ginger
  • 2 tomatoes or 1/2 cane tomato paste
  • 3 tbs oil
  • Desired amount of salt, pepper & cumin seeds


  1. Roast egg plant whole on gas top and if in grill, cut in half length wise
  2. In the pan, add oil, grated ginger and chopped onion
  3. Cook them till they are little brown in colour. Add chopped tomatoes, crushed brinjal along with salt and pepper into the pan
  4. Cook it and keep on mashing until you get smooth Bartha
