Pav Bhaji


  • 1kg potatoes
  • 1 capsicum
  • 100g cauliflower
  • 2 carrots
  • 1 onions
  • 1 tin tomatoes
  • 2 tsp ginger
  • Salt, red and black pepper as per taste
  • 4 tbsp butter
  • 4 tbsp pao bhaji masala
  • A few coriander leaves


  1. Wash all vegetables.
  2. Peel potatoes, carrots and deseed capsicum.
  3. Dice all vegetables in big pieces.
  4. Steam vegetables for 10 – 12 minutes till they are tender.
  5. Mash the hot vegetables with masher.
  6. Dice onion finely and sauté onion and ginger in butter till golden brown.
  7. Add tomatoes and cook till it leaves fat.
  8. Add all the spices and pao bhaji masala and simmer it for another 5 minutes to get a smooth masala.
  9. Add the cooked masala to the vegetables and simmer on slow fire for ½ an hour with constant stirring and mashing to get smooth Pav Bhaji.

Garnish with Diced Onions and Coriander
Serve with hot BUNS.
