Nutmegs

Ingredients:

  • 500g kidney beans
  • 2 onions
  • 1 cup plain flour
  • 2 tbsp ginger
  • 4 tbsp baking powder
  • 2 tbsp salt
  • 2 green chillies
  • Oil for frying

Method:

  1. Wash beans and soak in water overnight with salt.
  2. Boil the beans in pressure cooker in minimum water for twenty minutes.
  3. Cool the beans and mash in processor to make a paste.
  4. Dice onion and chillies and grate ginger.
  5. Add onion, chillies, salt, ginger and plain flour to the mashed paste and mix thoroughly.
  6. Make small balls of 1-inch size with wet hands and flatten them.
  7. Fry them in hot oil.
  8. The nutmegs can be stored in freezer and can be used whenever required as snakes in bread.
