Cauliflower Soup


  • 1 small cauliflower
  • 2 potatoes
  • 250g light milk
  • 1L vegetable stock
  • 1 onion
  • 2 cloves garlic
  • Salt, black pepper as per taste
  • 1 tbsp low fat cream
  • 1/3 cup pomegranate seeds


  1. Peel potato and dice potato, cauliflower, onion and garlic in small pieces.
  2. Add milk and vegetable stock to the chopped vegetables.
  3. Boil the mixture and simmer for 18 to 20 minutes until the vegetables are tender.
  4. Blend the vegetable mixture.
  5. Boil the soup and add salt and pepper.
