Vegetables with Tofu
Ingredients
- 250g firm tofu
- 100g cauliflower
- 1 carrots
- 100g mushrooms
- 1 tomato
- 1 onion
- 2 tsp ginger
- 1 can coconut milk
- Salt, red and black as per taste
- 1 tbsp oil
Method
- Wash all the vegetables.
- Dice carrot, onion and tomato.
- Slice cauliflower in small florets and mushrooms in half slices.
- Sauté ginger and onion till light brown.
- Add tomato, cauliflower, carrot and cook till vegetables are tender.
- Pour coconut milk and spices to the vegetables.
- Add tofu and mushrooms, cook on low heat to make the dish dry and crispy.
