Mango Pudding
Ingredients
- 1 kg mangoes
- ¾ cup milk
- 1 tbsp lemon juice
- 1 tbsp orange juice
- 1 ½ cup low fat cream
- 5 tbsp sugar
- 1 tbsp cornflour
- 10 pieces pistachio
- 1 tbsp icing sugar
Method
- Dissolve cornflour in water and boil it.
- Wash mangoes and peel then cut into pieces.
- Blend mangoes with sugar and milk in the blender.
- Pour the pulp in a pan and add 1 cup cream, cornflour and lemon juice.
- Mix the mixture properly and keep in the freezer to set it.
- Whip icing sugar, orange juice and ½ cup of cream.
- Take out the set pudding out and spread whipped cream over it.
- Sprinkle crushed pistachio and keep in the fridge.
