Thai Nuggets
Ingredients
- 500g nuggets
- 250g frozen vegetables
- 4-5 mushrooms
- 1 tin coconut milk
- 1 tin tomatoes
- Salt, red and black pepper as per taste
- 250g water
- 1 tsp oil
Method
- Dice nuggets into small pieces.
- Wash nuggets in boiling water twice to make them oil free.
- Sauté nuggets in oil to make them crispy.
- Thaw frozen vegetables and cut them in small pieces.
- Cut mushrooms into half pieces.
- Add vegetables and tomatoes in nuggets and cook until the mixture is dry.
- Mix in mushrooms and cook for 5 minutes.
- Add spices and water and boil it for 15 minutes.
- Mix in coconut milk and cook for another 10 minutes.
Serve with Boiled Rice
