Carrot Delight
Ingredients
- 2kg carrots
- 250g sugar
- 100g milk powder
- 20ml milk
- 100g almonds
- 3 black cardamom
- 2 tbsp butter
Method
- Peel and wash carrots.
- Grate carrots in the blender.
- Steam the grated carrots to soften them.
- Sauté carrots in a big pan with occasional stirring till they are dry.
- Add sugar and keep on mixing frequently.
- Mix milk powder in milk and add to the mixture.
- Coarsely grind almonds and add to the carrots.
- Grind cardamom and discard the outer bark and mix in the mixture.
- Mix in butter and roast the delight till it is completely dry and shiny.
Serve with Tea or Coffee
