Mushroom Rice

Ingredients:

  • 1 cup cooked rice
  • 250g mushrooms
  • 1 red capsicum
  • 1 onion
  • 2 tsp ginger
  • 3 tbsps of tomato puree
  • 2 tsp cumin seeds
  • Salt, red and black pepper as per taste

Method:

1. Wash rice twice and add 2 cups of water
2. Dice onion and stir fry it with ginger.
3. Add tomato puree and all the spices.
4. Mix in mushrooms and capsicum and sauté till they are tender.
5. Add rice and mix it.
6. Cover the pan with cover and cook till the rice are done
