Potatoes with Fenugreek
Ingredients
- 1kg fresh fenugreek or 250g frozen fenugreek
- 250g potatoes
- Salt, red and black pepper as per taste
- 1 tbsp oil
Method
- Remove stems from fenugreek leaves, wash and dice them.
- The frozen fenugreek is used as such.
- Wash potatoes and in very thin square pieces on cutting board.
- Sauté fenugreek and potatoes in oil.
- Roast for 20 – 25 minutes on low flame till it is tender and dry.
- Add spices and cook for another 10 minutes to make it crisp.
