Potatoes with Fenugreek

Ingredients

  • 1kg fresh fenugreek or 250g frozen fenugreek
  • 250g potatoes
  • Salt, red and black pepper as per taste
  • 1 tbsp oil

Method

  1. Remove stems from fenugreek leaves, wash and dice them.
  2. The frozen fenugreek is used as such.
  3. Wash potatoes and in very thin square pieces on cutting board.
  4. Sauté fenugreek and potatoes in oil.
  5. Roast for 20 – 25 minutes on low flame till it is tender and dry.
  6. Add spices and cook for another 10 minutes to make it crisp.
