Cauliflower Soup
Ingredients
- 1 small cauliflower
- 2 potatoes
- 250g light milk
- 1L vegetable stock
- 1 onion
- 2 cloves garlic
- Salt, black pepper as per taste
- 1 tbsp low fat cream
- 1/3 cup pomegranate seeds
Method
- Peel potato and dice potato, cauliflower, onion and garlic in small pieces.
- Add milk and vegetable stock to the chopped vegetables.
- Boil the mixture and simmer for 18 to 20 minutes until the vegetables are tender.
- Blend the vegetable mixture.
- Boil the soup and add salt and pepper.
