Pav Bhaji
Ingredients
- 1kg potatoes
- 1 capsicum
- 100g cauliflower
- 2 carrots
- 1 onions
- 1 tin tomatoes
- 2 tsp ginger
- Salt, red and black pepper as per taste
- 4 tbsp butter
- 4 tbsp pao bhaji masala
- A few coriander leaves
Method
- Wash all vegetables.
- Peel potatoes, carrots and deseed capsicum.
- Dice all vegetables in big pieces.
- Steam vegetables for 10 – 12 minutes till they are tender.
- Mash the hot vegetables with masher.
- Dice onion finely and sauté onion and ginger in butter till golden brown.
- Add tomatoes and cook till it leaves fat.
- Add all the spices and pao bhaji masala and simmer it for another 5 minutes to get a smooth masala.
- Add the cooked masala to the vegetables and simmer on slow fire for ½ an hour with constant stirring and mashing to get smooth Pav Bhaji.
Garnish with Diced Onions and Coriander
Serve with hot BUNS.
