Broccoli Soup
Ingredients
- 250g broccoli
- 1 onion
- ½ tsp garlic
- 1 tbsp butter
- ¼ tsp oregano herb
- 1 pinch nutmeg
- 1½ cup milk
- 1½ cup vegetable stock
- 1 cup water
- 1 tbsp corn flour
- Salt, black pepper as per taste
Method
- Chop broccoli in small brooklets.
- Dice onion and grate garlic.
- Heat butter in a pan and sauté onion and garlic.
- Add corn flour and sauté it for 2 minutes.
- Add broccoli and vegetable stock.
- Simmer for 5-6 minutes to soften the broccoli.
- Add water to the broccoli and blend it in a blender.
- Add hot milk to the pureed soup.
