Eggplant with Colocasia
Ingredients
- 4 long egg plant
- 250g colocasia
- 1 onion
- 1 tomato
- 1 tsp turmeric powder
- Salt, red and black pepper as per taste
- 3 tsp oil
Method
- Peel colocasia and wash it.
- Dry with paper towel and dice into long thin slices.
- Fry colocasia in oil to light brown colour.
- Peel onion and dice in thinly.
- Cut egg plant in long thin stripes.
- Sauté onion till golden brown.
- Add diced tomato and the spices.
- Mix in eggplant and fried colocasia.
- Cover the vegetable and stir it occasionally.
- The eggplant and colocasia will be ready in 5-7 minutes until tender.Enjoy with Tandoori Chapati
